French-ish Country Salad
Not quite a peasant beet salad or traditional French country salad....but as soon as I make Dijon vinaigrette....French enough.
And this salad is ALL veggies, so 4 servings right here of my 7-10 daily veggies that keep my body well-fueled and well-nourished.
Ingredients:
- Mixed baby greens
 - Roasted beets, sliced
 - Radishes, shaved
 - Red onion, just a bit for that zing!
 - Crumbled goat cheese
 - Hazelnuts, crushed
 
Classic Dijon Vinaigrette:
- 1 tbsp fresh lemon juice
 - 1 tsp Dijon mustard
 - 1 tbsp red wine vinegar
 - 1/2 cup olive oil
 - Salt, pepper to taste
 - Mix in bowl with a fork until well combined
